 This recipe is for a three-layer cake that combines the rich flavor of chocolate with the freshness of mint.


Ingredients

For the chocolate cake:

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup milk

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup boiling water

For the mint glaze:

1 cup (2 sticks) unsalted butter, at room temperature

4-5 cups sifted powdered sugar

1/4 cup milk

1/2 teaspoon mint extract (or to taste)

A few drops of green food coloring (optional)

For the chocolate ganache:

100 g chopped semisweet chocolate

100 ml heavy cream

For decoration:

Chocolate cream cookies

Fresh mint leaves

Instructions

1. Prepare the chocolate cake:

Preheat oven to 175°C (350°F). Grease and flour three 8-inch (20 cm) round cake pans or two 9-inch (23 cm) round cake pans.


In a large bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt.

Add the milk, oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.

With the mixer on low speed, slowly pour in the boiling water. The batter will be very thin.

Divide the batter evenly among the prepared pans.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans before removing them.


2. Prepare the mint frosting:

In a large bowl, beat the butter until smooth and creamy.

Gradually add the powdered sugar, beating on low speed, then medium, until incorporated. Pour in the milk, mint extract, and food coloring (if using). Beat on high speed for 2-3 minutes, until the frosting is light and fluffy.


3. Prepare the chocolate ganache:

Heat the heavy cream in a small saucepan until it just begins to bubble around the edges.

Remove from the heat and add the chopped chocolate. Let it sit for 1 minute, then stir until you have a smooth, glossy mixture. Let it cool slightly to thicken.


4. Assemble and decorate the cake:

Place one cake layer on a plate or cake stand.

Cover it with a thick layer of mint frosting.

Repeat the process with the remaining cake layers and frosting. Cover the entire cake with the remaining frosting.


To decorate, carefully pour the chocolate ganache over the top of the cake, allowing it to drip down the sides. Decorate with chocolate cookies and fresh mint leaves.
